A flick of the spoon to break a shell of intense dark raw chocolate which reveals an apricot compote with tangy fruity notes and a creamy chia pudding. Rich in omega 3, fiber, beta-carotene, vitamin C and antioxidants, this recipe nourishes from the inside and delights the taste buds.

For 1 pudding:
-150 g of vegetable milk
-20 g chia seeds
-2 tbsp apricot compote
-2 tbsp melted dark raw chocolate

Mix the plant-based milk and chia seeds in a small bowl or large glass. Leave to rest in the refrigerator for at least 2 hours. You can also prepare it the day before.

Remove from the refrigerator and carefully add the apricot compote on top. If you have fresh apricots, simply puree them by crushing them with a fork or blending them in a blender with a dash of lemon to prevent the compote from oxidizing. Pour the previously melted chocolate into the bain-marie and spread it with a spoon. Place in the refrigerator for another 15 minutes before serving.
